The most important thing to understand about YouTube audio quality is that YouTube's servers store audio at a maximum of 256kbps AAC for most videos, regardless of what format you download it in. This means downloading as FLAC does not give you CD-quality audio — it gives you a lossless container holding 256kbps AAC-quality audio without any additional compression degradation on top of that. The practical benefit is that FLAC is the ceiling of what YouTube contains for that track. You are not losing anything in the extraction process. MP3 at 320kbps adds another layer of lossy compression on top of the existing YouTube audio, which means FLAC preserves marginally more quality.
For casual listening through phone speakers or standard earbuds, MP3 is completely sufficient and produces smaller files.
